The mixer

The cutter

  • The cutter works on the principle of compressed air and cuts dough into uniform sizes and weights.
  • Equipped with a highly accurate electronic circuit to achieve the best performance in terms of sequential work of continuous cutting.
  • The slicer is equipped with a basin made of high quality food grade stainless steel and the basin is equipped with an independent circular movement.
  • Front part – Dough outlet can be easily removed and installed for cleaning purposes
  • The spiral is made of high quality food grade stainless steel and is powered by a separate motor.
  • Cutting knives (1) made of high quality chrome and securely fixed to avoid any problems or errors during continuous work

  • The number of pistons is (1) (the driving part of the cutting knives) and the air switches (1) as well (the compressed air distributor) and the water vapor trap (1). After cutting the dough, each piece passes through a special cylinder that is also covered with food felt and crushes the dough balls to transform them from a spherical shape to a flat circular shape.
  • The cutter is equipped with a high-quality stainless steel flour tank, perforated from the bottom with small holes. It is equipped with a fluctuating movement and its function is to sprinkle flour on the dough while it is being crushed. The sprinkling process is in quantities that can be controlled as desired through a special control tool located in the cutter.
  • The cutter is equipped with a comprehensive electrical control panel and contains an inverter to control the speed as desired through an electrical resistance in the main control panel.
  • Chains, bearings and gears are all of Turkish origin and of the best types, and they are all covered with covers made of stainless steel to maintain the safety of the worker and add more beauty in the shape and precision in the work.

Automated chip

House of fire

  • It is considered one of the most important components and has been designed in an engineering way to save fuel, maintain internal heat, and cook Arabic bread loaves well.
  • The fire house is built from the inside with Turkish-made fire bricks, which are among the best types of fire bricks available in the world, as they can withstand temperatures of up to 1500 degrees Celsius.
  • The fire house is well insulated with glass wool insulation so that heat leakage is minimal.
  • The fire stone forms a dome inside the oven and the dome is connected with iron to increase its cohesion, then layers of fire cement (fire clay) and salt are poured over it, etc.
